Shahi Mutter Paneer


Shahi Mutter Paneer
Prep time: 10mins | Cooking time : 20mins | Serves 4

Ingredients:
·      1/2 kg fresh Paneer
·      2 medium sized onion finely sliced
·      Cumin seeds – 1 teaspn
·      Cashew nuts – 1 small cup
·      Dry raisins – 5-10
·      Ginger Garlic Paste – 1 tablespoon
·      Cumin seeds – 1 teaspn
·      Coriander leaves - 3 tblspn
·       Turmeric - 1 teaspn
·      Whole milk or fresh cream – 1 cup
·      Fresh Peas – 1-1.5 cup
·      Fried onion – 2-3 Tablespoon
·      Capsicum/Bell Pepper – 1 small one diced.·      Garam Masala Powder – 1 teaspn
·      Kasuri methi leaves crushed – 1 teaspn
·      Salt to taste
·      2 tbsp ghee or oil

For the masala:
·       Tomato Paste – 2 Tablespoon
·       Coriander powder - 4 teaspn
·       Cumin seeds- 1 teaspn
·       Garam Masala Powder - 2 teaspn
·       Chili Powder - 2 teaspn
·       Kasuri methi leaves crushed - 2 teaspn
·       little milk to mix to a fine paste

Prepare Masala:
1.      Take a bowl and mix all the ingredients listed for masala and make a thick smooth gravy.


Prepare Main Dish:
1.     Heat ghee in a pan. 
2.   Add cumin seeds in ghee when hot.
3.   Add cashew nuts and saute for a minute in ghee.
4.  Add onions and curry leaves, fry onions until it turns golden brown.
5.    Add little salt and a pinch of turmeric and ginger garlic paste and sauté till raw smell goes away. 
6.   Now add Masala gravy prepared before to this and mix well. Let it come to a boil so that the dry masala in the gravy is cooked and then add raisins.
7.   Switch off the gas and let this mixture cool down. Once it comes to room temperature, gring it in to fine paste using Milk. Do not use water.
8.   Take some ghee in the same vessel and now add some fried onions. If you don’t have fried onions then you can use regular onion and fry it till it is completely cooked. Saute the fried onion for 2-3 minutes.
9.  Add the ground masala to this fried onion and mix for 2-3 minutes.
10.  Check gravy consistency and add some milk/cream to get desired thickness. Add peas, paneer and capsicum and bring it to a boil.
11.  Adjust salt and add some fresh ground kasuri methi leaves and a pinch of garam masala. Garnish with coriander leaves
12.  Serve the dish with basmati rice or naan/roti!!
